Black Bean and Corn Chili

Chili sounded good on this chilly day. I found the recipe by googling Black Bean and Corn Chili. Meriam’s Recipe Blog popped up and it sounded easy and yum!

It was a hit with Jake! I’m always super proud when he likes what I cook!!

Here it is for ya:

Black Bean and Corn Chili

1 lb. hamburger
1 cup chopped onions
1 clove minced garlic
2 cans tomato soup
1 can corn or 2 cups frozen corn
1 15 oz can crushed tomatoes (**I used almost an entire 28oz can)
1 can black beans, rinsed and drained
2 – 3 tablespoons chili powder (more if you like it real hot)
1/4 cup sugar

Brown hamburger, onions, and garlic. Drain, then mix in remaining ingredients. Bring to a boil and then reduce heat and simmer 20-30 minutes. Serve with sour cream, cheddar cheese, and corn chips on the side.
